The particularity of the Cloitre des Cordeliers, the production of sparkling wines and the underground galleries in this atypical place in the heart of the medieval city classified UNESCO.The guided tour begins with a historical explanation of this former cloister classified as a Historic Monument, an architectural masterpiece renovated in 2019 which mixed the old and the modern. It continues in part of the 3 km of underground galleries 20m underground in which the sparkling wines of the Cordeliers are produced, the history of the quarries and the production method are explained there. It ends with a tasting of vintage sparkling wines accompanied by one of the famous Saint Emilion macaroons, in the mezzanine of the 15th century church.
